Peppermint Chocolate Rocky Road Cheesecake – With Gelatin

Base:
1C cashews
1T cacao
3 dates
1T coconut oil
Pinch sea salt
Place all ingredients in a mixer and mix until combined. Press evenly into pan.

Filling:
200g good quality chocolate
250g cream cheese
½C cream
2tsp Gelatin Health – Digestive Health
¼C water
1C peppermint gummies (see our recipe)
1C peppermint marshmallows (see our recipe)

Place Digestive Health and water in a small bowl to bloom.
Melt chocolate and set aside to cool slightly.
Mix cream cheese until smooth.
Add the chocolate, cream and Digestive Health mix, mixing until smooth.
Fold through the gummies and then marshmallows.
Pour on top of base and chill until set.
Can be made ahead and frozen.
