Peppermint Marshmallows and Gummie Cubes with Gelatin

Peppermint Two Ways

Peppermint Infusion:
3C boiling water
4T peppermint tea leaves

Place leaves in a bowl and tip water over, leave to infuse for 10 minutes then strain.

Marshmallow:
1C honey
1C peppermint tea
Pinch of sea salt
3T Gelatin Health – Digestive Health
Cacao or tapioca for coating

Place half a cup of tea in a bowl and sprinkle over Digestive Health, set aside.
In a large pot place remainder of tea, sea salt and honey.
Bring to the boil and continue to boil until temperature has reached 120 degrees
celsius.
Pour honey mixture over the Digestive Health mix and beat on medium speed until
mixture thickens and shines.
Pour into silicon tray or Christmas moulds.
Once set, slice and coat in cacao or tapioca.
Can be frozen until required.

Gummies:
2C peppermint tea
8T Gelatin Health – Digestive Health
4T honey

Sprinkle the Digestive Health over the warm tea and stir until all dissolved.
Stir in the honey.
Pour into a silicon tray or Christmas moulds, once room temperature place in the
fridge to set.
Can be frozen until required.
